cornbread muffins + a cornbread variation

When I first thought about these cornbread muffins, I initially thought I would make them as madeleines. I tested one batch and decided that the whole concept was a bit ridiculous and abandoned the idea. While muffins lack the whimsy of madeleines, I think this cornbread iteration is better suited to a muffin.
